Now that summer’s here. I love eating ice cold drink and dessert in the summer heat, especially "Pat bing-soo" is my favorite dessert. It is a very cool and popular dessert in Korea. It’s even sold at McDonald, KFC and Burger King.
It's a dish full of shaved ice topped with red bean paste, a scoop of ice cream, condensed milk, fruits, and Other Toppings. It is very easy to make and you can add some toppings to suit your taste. (But I always eat that at cafes, restaurants and bakeries)
A lot of cafes have their own version of this dessert. Sometime there are unusual menu that I never expected. For an example, Makgeolli bing-soo, Royal milk tea bing-soo, Cheesecake bing-soo, Injeolmi bing-soo..

Today, I will introduce you to a variety of bing-soo I have eaten. These things are only part of the menu you can eat in Korea.
Menu: Adzuki-bean ice dessert
Cafe: White block in Gyeonggi-do
This shaved ice topped with red bean paste, a scoop of green tea ice cream, nuts, chewy tteok(rice cake), syrup, and etc.
It'd depend on personal taste, But I don't like these bing-soo includes too many ingredients.

Menu: Azabu red bean ice flakes
Cafe: Azabu in Seoul
Menu: Look&eat Pat bing su
Cafe: Look & eat in Seoul
Cafe: Rue in Seoul
This bingsoo includes strawberry ice cream, fruits, mochi and topped off with shaved ice that is drizzled with strawberry syrup. Very delicious and refreshing!
Menu: Milk bing-soo
Cafe: Rue in Incheon
This bingsoo do not follow the tradition and do not include the red bean paste. It looks like a huge snow mountain in a bowl decorated with nuts and ice cream. And it's suited to people who don't like red bean paste.
Menu: Green tea bing-soo
Cafe: Cafe de Nophie in Gyeonggi-do
There are hundreds of different ice flavors from vanilla, strawberry, chocolate to green tea. Among them, green tea icecream is one of the most common ingredient for making Pat bing-soo. I also like the astringent taste of green tea:)
The glutinous rice cake on the shaved ice has a chewy texture and It also has red bean filling.
Menu: Shaved milky snow ice with green tea powder and green tea gelato
Cafe: 10 CORSO COMO CAFE in Seoul
This is much simpler than any other bing-soo, but it has a smooth, rich taste.
Aside from this, There are a lot of different kinds of bing-soo. If you haven't tried bing-soo yet and you are planning a trip to Korea this summer, try it!
It’s a great way to cool off during the hot days!
